Ever since we found Kodiak Cakes mix at Costco, we’ve been obsessed! We have tried it as waffles and pancakes but decided to switch it up and try donuts! Their mix already has a ton of protein in it (14g per serving) but add a protein glaze and you are set! The combinations are endless but I made a maple protein glaze so they tasted like pancakes. You can bet that we will be trying them dipped in syrup for breakfast because the macros are even lower than most types of bread. Plus, they are VERY easy to make.
- 2 cups of Kodiak Cakes mix
- 1/2 cup unsweetened vanilla almond milk
- 1/3 cup water
- 1 large egg
- 3 tbsp Truvia or sweetener of choice
- 1 tsp vanilla extract
- 1 scoop vanilla protein powder (I used Power Sports Diesel Protein)
- enough almond milk to make a thick glaze
- 1/2 tsp maple extract
- sprinkles (optional)
Preheat oven to 350. Mix all donut ingredients together in a large bowl and then spoon mixture into a large plastic bag. Cut one corner of the bag so you can easily squeeze it into a donut pan. The mixture will be airy, so tap the donut pan on the counter a few times to get some of the air bubbles out. You can either use all of the batter to make six donuts and then cut them in half (what I did) or you can fill the pan half way and make two batches of six. Cook for 6-7 minutes. Cool. Mix together glaze ingredients and pour over top or simply dip in syrup!
